Put on about a cup of rice and bring to a boil, then cook on low heat. I used Kroger brand Jasmine rice.
After thawing and cleaning the chicken, I chopped it up into cubes and seasoned with cajun seasoning. I used McCormick Perfect Pinch Cajun seasoning. I fried on medium to high heat in olive oil (or use oil of your choice) until brown on both sides then set aside on a separate plate.
Next, I chopped up one onion and green bell pepper and sautéed them on high heat in the same oil I used for the chicken. I also added a little more seasoning and oil.
Once the veggies were done, I added a can of Kroger brand diced tomatoes and green chilies and stirred.
Next, I added the chicken to the veggie mix and stirred. Note: excuse the stove, I do not cook neatly.
Added rice and stirred.
