I'm an avid "pinner". I LOVE Pinterest. I pinned a flourless banana recipe a while back. While on my journey to a healthier and cleaner diet, I jumped at the notion that I didn't have to give up my beloved pancakes. The recipe only calls for a few ingredients: 1 banana, two eggs, cinnamon and vanilla extract. It was an easy to follow recipe. Check below to see step-by-step pictures and my thoughts on the dish!
I first mashed the banana. It looks unappealing, I know.
After I whisked the eggs, I added a 1/2 teaspoon of vanilla extract,
followed by a 1/2 teaspoon of cinnamon.
I then added the mashed banana to the batter. The picture above is premixed, but the recipe warmed the batter will not mix completely together.
Instead of syrup, I added Greek yogurt, honey and granola for texture. The taste of the pancakes was not as naturally sweet as the traditional breakfast staple. The banana taste is powerful, so if you're not a fan of the fruit, this recipe may not be for you. However, the dish was very filling.
